Pickled Red Onion

Pickled Red Onions*


1 small red onion, thinly sliced

¾ cup apple cider vinegar

½ cup water

½ tsp salt

½ tbsp sugar (or honey)


Pack onions into a medium-sized glass jar.

Boil vinegar, water, salt and sugar in a small pot.


Add mixture to the jar, making sure to cover all the onions.

Place the lid on tightly, let the jar cool, and leave in the fridge overnight.

Store for up to two weeks.

Add a spoonful or two to salads, on top of turkey burgers, or mix in with your favorite

grains.
