Warm Brussels Sprouts Salad

Ingredients:
2 TB avocado or olive oil
1 tsp sea salt
1 1/2 lb fresh Brussels sprouts, trimmed and cleaned, and cut into halves
1 medium-sized organic Honeycrisp or Gala apple, cored and cut into 1/2 inch size chunks
1/3 C walnut pieces
1/3 C dried cranberries (no added sugar) or fresh seeded pomegranate
2 TB rice vinegar or fresh lemon juice
1/2 tsp freshly ground black pepper
Directions:
Preheat oven to 400 degrees. Drizzle 1/2 the oil onto a baking sheet, and add Brussels sprouts. Drizzle the remaining 1/2 of the oil onto the Brussels sprouts, season with sea salt, and toss to coat.
Place in the oven and roast for 25-30 minutes, tossing once or twice while cooking. The Brussels sprouts are done when the edges are golden brown and crispy.
Transfer the Brussels sprouts to a large bowl while still warm. Add remaining ingredients, and toss to combine. Serve while still warm.
